Ours is a simple tale. My sister and I learned the value and pleasure of baking from our mother at an early age, but it wasn't until we were both diagnosed with Celiac disease that we started experimenting with gluten-free ingredients. In 2012 we spent a year in Australia living with our grandmother, working on Masters degrees and, in our free time, experimenting with flour blends and adapting recipes to fit our new lifestyle. We quickly learned that texture and taste did not have to be sacrificed and that we could create goods that were as delicious as or better than their glutenous relatives.
After that we expanded our repertoire and catered parties and weddings. In 2017 I bought and outfitted my own food truck— a dedicated gluten-free kitchen space— and provided products for events and special orders all over Portland.
While in Portland, Estelle participated at the Portland Saturday Market, the Portland Night Market and Snackfest, Gobble Up Northwest, the Festival of the Last Minute, as well as small local events throughout Portland. We also worked with local cafes and restaurants
including Extracto, Ristretto Roasters, Corbett Fish House, JoLa Cafe, Groundbreaker Brewing, Loyal Legion, The Stacks Coffeehouse, Upper Left Roasters, as well as catered many private events.
Estelle made the move from Portland in November 2020 to bring our savory and sweet gluten-free goods to Eugene. Since reopening in 2022 (thanks, Covid) we participated in the Lane County Farmers Market, LCFM Night Market, and provided wholesale products to Crema and Bloom in Springfield and Lion and Owl in Eugene. We also catered various events and provided Seasonal and Holiday Menus for delivery from the trusty food truck.
AND NOW WE FINALLY HAVE A BRICK AND MORTAR LOCATION! We always dreamt of opening our own bakery to spread our love of treats to those who need— or just want— to experience the myriad benefits of gluten-free living. Come see us at 349 Main Street in Springfield, open Wednesday-Sunday from 8am-3pm, closed Monday + Tuesday.
